Here’s a secret about my husband: He loves pancakes! If we ever go off program, pancakes are the first thing he wants. But that is saved for very special occasions so I needed to find a way to still give him pancakes done Keto style. We don’t eat these every weekend but it is a yummy treat and a nice change if you are getting tired of the same keto breakfast.
These are basically foolproof, super easy and freaking delicious. And you will get your pancake craving met while staying on Keto.
Ingredients:
50 g cream cheese, softened
50 g heavy cream
2 whole eggs
1 tsp vanilla extract
50 g almond flour
pinch cinnamon (optional)
1/4 tsp baking powder
pinch of salt
1 tbsp swerve (or 2 drops of liquid stevia)
sugar free syrup (optional)
cooking spray
grass-fed butter, softened
This lovely recipe begins by combining the cream cheese and heavy cream in a medium sized bowl and whipping together with a hand mixer until smooth and well combined.
Add in the eggs and vanilla and whip again until fully incorporated. Next, in goes the flour, baking powder, swerve, salt and whatever spice you like. I used cinnamon but pumpkin spice or nutmeg would also be wonderful. But even if you go old-school plain pancakes, they will still be delicious!
**for alternative sweetener, I prefer using swerve. I personally do not like the aftertaste of liquid stevia. To me, swerve acts and tastes like sugar more than any other sweetener. Also, I do not consume any alcohol so my vanilla is alcohol-free. It tastes just like regular vanilla. But, that is just my personal preference. Please use whatever sugar alternative and vanilla you enjoy. You could even leave the sugar alternative out, although I would not leave out the vanilla. It adds a depth to the pancakes you cannot otherwise acheive.
Aaaaaaand we are ready to cook em up!
Spray a non-stick pan with cooking spray over medium heat. I found ghee spray at my local HomeGoods store and had to get it. But whatever you have on hand will be fine.
Scoop about a 1/4 cup of the batter into the skillet. I only did one at a time but if you can do three or four at a time, go for it! Let the pancakes sit and cook for about 2 minutes or until the bottoms turn a gorgeous golden brown. You can also put a lid over the pan to help the cooking process. Flip the pancakes over and let them cook for another 2 minutes or so until they are cooked through.
My husband wandered into the kitchen as I was cooking the first batch because the whole house was filled with that glorious baked cinnamon scent and he had to see if I was almost breakfast time.
Once the pancakes are done, remove them from the pan, set them aside and immediately spread them with butter. Continue the process until all the batter is gone. I was able to make 8 pancakes from this recipe and believe me, they were so flavorful and rich, I was only able to eat three of them. The hubby took care of the rest.
We ate them with sugar-free maple syrup. Just a drizzle was all that was necessary, we truly could have eaten them with just a pat of butter and been very satisfied.

Ingredients
- 50 grams cream cheese softened
- 50 grams heavy cream
- 2 whole eggs

- 50 grams almond flour
- 1 tbsp swerve granulated version
- 1/4 tsp baking powder
- pinch cinnamon optional
- spray nonstick cooking spray
- butter for spreading
- drizzle sugar-free syrup
Instructions
- Whip softened cream cheese and heavy cream until well combined. Add eggs and vanilla and whip together again. Add almond flour, swerve, baking powder, cinnamon and whip until ingredients are fully incorporated. Heat non-stick skillet over medium heat and spray with cooking spray. Scoop 1/4 cup of batter into pan and cook 2 minutes or until golden brown on bottom. Flip and cook another 2 minutes or until fully cooked. Remove from pan, spread with butter. Continue until all batter is used. Drizzle with sugar free syrup (optional).
