Get ready for an incredibly easy to make and equally delicious dinner! With just a few ingredients this can hit your table in less than 30 minutes.
Ingredients:
2 8oz salmon filets
1/2 tsp paprika
1/2 cucumber, diced
1 avocado, diced
6 grape tomatoes, quartered
2 tbsp red onion, diced
1 garlic clove, minced
1 tbsp cilantro, chopped
1/2 lime, juiced
1/2 lime, sliced
2 chives, finely chopped
1 tbsp avocado oil
salt and pepper to taste
Preheat oven to 400 degrees.
Salt and pepper both sides of the salmon and place on oiled baking sheet, skin side down. Dust the salmon with the paprika and top with lime slices. Roast for 20 minutes or until desired temperature.
Combine cucumber, onions, garlic, cilantro, and tomatoes in medium sized bowl. Add lime juice and avocado oil. Toss together.
Add in diced avocado and a pinch of salt and pepper. Mix lightly, careful not to mush the avocado.
Remove salmon from the oven, plate and top with avocado salad. Finish with sprinkling of chives. If you don’t have chives, scallion greens would be lovely.
Don’t delay–eat right away!!
Paprika Salmon with Avocado Salad
Ingredients
- 2 8 oz salmon filet

- 1/2 lime sliced
- 1/2 cucumber diced

- 1 tbsp cilantro chopped
- 1/2 lime juiced
- 1 clove garlic minced
- 2 tbsp red onion diced
- 1 tsp chives finely chopped
- salt and pepper to taste
Instructions
- Pat dry your salmon filets and place on lightly oiled baking sheet. Sprinkle with lime juice and season with salt and pepper on both sides. With skin side down, sprinkle paprika over the salmon and top with lime slices. Bake for 20 minutes or to desired temp and remove from oven. In a medium sized bowl, whisk together oil, lime juice and cilantro. Add remaining ingredients except for the chives and mix together, being careful not to mush the avocado. Plate salmon and spoon half of the salad on top of fish. Sprinkle with chives. Serve immediately.
