It was pouring rain today so I decided to hunker down with some deviled eggs. These little protein/fat bombs are so tasty and have ZERO carbs and sugar so you can kind of go crazy with them. And since I am in quarantine I already had all the ingredients ready to go. So many wins happening here.
Take 6 eggs straight from the fridge and place them in boiling water. Let them boil for 10-12 minutes. Drain and place eggs in ice water bath for 5 minutes. Peel eggs- do your best to keep the integrity of the egg whites. Slice in half long ways. Scoop out the cooked yolks into a bowl. Mix in 1 tsp Dijon mustard and 1 tbsp mayo until well mixed and fluffy. Add a pinch of salt and freshly ground pepper to taste. Scoop the mixture into the egg white halves. Top with sprinkling of paprika and bacon bits. I also drizzled hot sauce over mine because hot sauce is life.
And then you can stuff your face with deviled eggs. I only made a small batch because I know I would just keep eating them if there were more. Literally have no control because they are so good.
