Under usual circumstances, I would have gone shopping and made a fantastic dinner with the freshest ingredients. But this is a strange time as I am on day 12 of self-quarantine. I’m waiting to go to the store until really necessary so I looked in my pantry and fridge and realized I had all the ingredients to make sloppy joes!! Winning! Chances are you have most of these items as well. If you are missing something, don’t worry. The basics are ground beef, onions and tomato sauce. The rest is really just for added flavor but certainly not absolute. I’ll be sharing with you the complete recipe. This makes about 6 sloppy joes.
Ingredients:
For the meat sauce:
1 tbsp olive oil
1 lb ground beef
1 red bell pepper, chopped
1/2 sweet onion, chopped
4 tbsp tomato paste
8 oz can tomato sauce (lowest carb you can find)
3 dashes Worcestershire Sauce
1 tbsp Montreal Steak seasoning
1/2 tsp salt
2 tbsp Swerve brown sugar
1 tsp Swerve granulated sugar
1 tsp ground mustard
For the Chaffles (makes 6 chaffles)
6 squares very thin slices cheddar cheese
3 eggs
Using a cast iron skillet or heavy bottomed pan, heat 1 tbsp of olive oil over medium high heat. Add the peppers and onions and saute 5 min or until veggies begin to soften. Add the ground beef and brown, breaking up the meat as it cooks and stirring into the veggies. Make a little space in the pan and add the tomato paste, allowing it to caramelize for one minute before stirring into the meat. Add the tomato sauce and mix well. Add the seasonings, Worcestershire sauce and sugars and stir. Turn heat down to low. Simmer for 10 minutes or until most of the liquid has reduced. You don’t want the liquids to completely reduce because remember, this is a sloppy joe so the meat sauce should be loose.
This is the quickest and easiest chaffle you will ever make. All you need is some very thinly sliced cheese and an egg. I will warn you that this is also a very messy situation so put a paper towel or dish towel under your waffle maker. Here’s what you do:
Scramble the egg. Heat up the waffle maker. Place a slice of cheese in there, top with about half of the beaten egg, place another slice of cheese on top and then close and wait until the waffle maker indicates it is done. You can tell because it will stop steaming. Lots of cheese will probably come out of the sides. That’s why you have the towel underneath. Also, you have to work fast which is why I don’t have any pictures of this because there was no time! Once the chaffle is done, carefully remove it from the waffle maker. I used a spoon to help get it out. These chaffles are like crispy cheese rounds. Delicious!
Now just make a chaffle sloppy joe! The chaffles were kinda big so I used half a chaffle per sloppy joe which made a total of 6. I served mine with some slaw. And oh, man, were these good! The best part is that this is a pantry meal so you can make it with whatever you already have. Enjoy the yum!

Ingredients
For the Meat Sauce

- 6 slices cheddar cheese very thin
- 3 eggs beaten
Instructions
For the Meat Sauce

Make a space in the pan and add tomato paste, allowing it to caramelize for 1 min before stirring into meat. Add tomato sauce and stir. Add seasonings, Worcestershire sauce and sugars and stir. Turn heat down to low and simmer 10 min or until most of the liquids have reduced but the sauce is still loose and "sloppy."
For the Chaffles
- Beat eggs. Place a towel under your waffle maker. Turn it on and once it is ready, place a slice of cheese on the bottom, add about 2 tbsp of egg or just over half of a whole beaten egg, top with another slice of cheese and close waffle maker. It will be ready once the steam stops or the indicator turns ready. Carefully remove the chaffle. Make a sloppy joe with the meat sauce using half of a chaffle per joe.
