Ok, ok, I know, that title is a mouthful. But trust me when I tell you that if you make this, your mouth will be full of some seriously fabulous food! This recipe basically came about because I had lounged around all day and then realized I only had about 30 minutes left to make dinner before my husband came home. So I ran to the fridge and assessed my situation: two filets of salmon (great), a bunch of broccoli rabe (great), parsley (great), and–heck yes!–some feta (great great great)! And of course, my pantry was always stocked with gobs of garlic. I wasn’t exactly sure what was going to happen but I knew I had some fantastic ingredients so hope was high. Ingredients:
Salmon filets , skinless
1/2 cup feta cheese, crumbled
2 tbsp. parsley, chopped
2 garlic cloves, pressed or very finely minced
Salt and pepper (about 1/4 tsp each)
Optional veggie side dish:
Broccoli rabe, roughly chopped
1 tsp olive oil
Pinch salt and pepper
Preheat oven to 375 degrees.
Take a small bowl and whip together the feta, garlic and herbs. I had parsley on hand so that is what I used. But you could also use dill, thyme or rosemary. Whip until the feta becomes fluffy.
Take a lined, lightly oiled sheet pan. Add the veggies and toss in a tbsp of olive oil and pinch of salt and pepper. Push the veggies to the edges of the pan so there is a little open space in the middle. Place the salmon filets in the middle space. Sprinkle salt and pepper around all sides of the salmon. You don’t have to go cra-cra with the salt because the feta has a fair amount of salt already. The salmon skins should be removed but don’t have to be. Place the skin side down on the sheet pan. Top the salmon with a generous amount of the feta.
Stick the sheet pan in the oven and cook 15-25 minutes depending on your preferred doneness. I like mine medium so that took about 18 minutes. Just check it and cook a little longer if you like.
And dinner is done!! Check out how the feta gets a little golden brown. And the broccoli rabe is beautifully roasted and the edges are a little crispy. Yum! And I still had a few min to relax before hearing my cute hubby’s keys jangling in the door.
Garlic Herb Feta Topped Salmon Sheet Pan Dinner
Ingredients
- 2 salmon filets skinless
- 1/2 cup feta cheese crumbled
- 2 cloves garlic pressed or very finely minced
- 2 tbsp parsley chopped
- 1 bunch broccoli rabe roghly chopped
Instructions
- Pre heat oven to 375 degrees. Whip together feta, garlic and parsley until well mixed and fluffy. Put veggies on sheet pan, drizzle with tsp of olive oil, season with pinch of salt and pepper and toss well. Push veggies to sides of pan. Add salmon filets to middle of pan and srizzle with tsp of olive oil and season with a little salt and pepper on all sides. With skin side down, add generous spoonful of feta to tops of filets. Place sheet pan in oven and bake for 15-25 min to desired doneness.
