Ingredients:
1 lb ground beef, grass fed
4 slices bacon
1 tbsp. butter
2 tbsp. cream cheese
1 tsp salt
1 tsp pepper
1 tsp onion powder
1 tsp garlic powder
1 egg
1/2 cup heavy cream
2 tbsp. sugar free ketchup
2 tbsp. yellow mustard
2 cups kale, chopped
2 cups cheese, grated
1 tomato, chopped
1/4 cup pickles, chopped
1 cup pork rinds, crushed
Pre heat oven to 400 degrees. Crisp up your bacon and chop it into bite sized pieces. Set aside on paper towels to drain.
Heat butter in nonstick skillet over medium heat. Add ground beef and cook until browned, breaking up the meat as it cooks. Once browned, add in the cream cheese and continue cooking, mixing the cream cheese into the ground beef. Add the seasonings, stir together.Turn of heat.
Layer the bottom of a casserole dish with the kale. Sprinkle with a pinch of salt and pepper. Add the ground beef in a single layer.
In a small bowl, whisk an egg. Add the heavy cream, ketchup and mustard and whisk together. Pour evenly over the top of the beef. Next, layer with the grated cheese, crispy bacon and pickles. Top with the crushed pork rinds.
Wrap casserole dish tightly with heavy tin foil. Bake in oven for 30 minutes. Remove the foil and broil for 3 minutes. Remove from oven and top with tomatoes. Allow it to set for 15 minutes.
And then you can gather everyone together and cheer “Bacon Cheeseburger Casserole time! Bacon Cheeseburger Casserole time!!” before dishing it out and stuffing it in your face.
