I have for you a super easy, one pan meal with a special ingredient that will kick it up from decent to delicious! What is the secret ingredient, you ask? Marinated feta! The feta can be made the morning or even day before preparing the rest of the meal. You can find the recipe here:

Ingredients:
4-6 chicken thighs, bone-in
1 cup small broccoli florets
10 cherry tomatoes
2 tbsp. olive oil
2 tbsp. butter, softened
1 tsp salt
1 tsp black pepper
Preheat oven to 400 degrees F.
Take your chicken thighs and pat them dry. Rub them on all sides with the softened butter and season with half of the salt and pepper.
Add broccoli and tomatoes to a lined sheet pan. Drizzle with olive oil and season with remainder of salt and pepper. Toss well, coating the veggies with the oil and seasonings. Place the chicken on top of the veggies, skin side up.
Roast for 1 hour or until internal temp of the chicken reaches 165 degrees.
Plate your desired amount of chicken thighs (I usually only have two and while my hubby can eat three) with the veggies. Take some of the jus in the bottom of the sheet tray and drizzle it over everything.
Top with a nice spoonfull of the marinated feta.

One Pan Chicken Thighs and Veggies with Marinated Feta
Ingredients
- 4-6 chicken thighs bone-in, skin-on
- 2 tbsp butter softened
- 2 tbsp olive oil
- 1 cup broccoli florets
- 10 cherry tomatoes
- 1 tsp salt

- 1-2 tbsp marinated feta
Instructions
- Pre-heat oven to 400 degrees F. Pat chicken dry, rub with butter and season with 1/2 tsp of salt and black pepper. Set aside. Place broccoli and tomatoes on lined sheet pan. Toss in olive oil and salt and pepper, coating well. Place chicken thighs on top of veggies. Roast in oven for 1 hour or until internal temp of chicken reaches 165 degrees. Plate chicken and veggies, spooning some of the jus from the pan over everything. Top chicken with feta and serve.
