If you ever feel like you just want something quick and easy but still fully Keto, throw together a burrito bow! You can make it with almost any protein: chicken, shrimp or ground beef and serve it over keto veggies with some cheese, sour cream and guac or avocado and you are ready to go.
For this recipe, we will be making a beef burrito bowl over greens with all the fixins.
Ingredients:
1 lb grass-fed ground beef
4 strips bacon, chopped
1 tbsp. favorite chili pepper spice
1 tsp cumin
1 tbsp. guacamole seasoning (optional)
1/2 red pepper, diced
1/4 yellow onion, diced
2 cloves garlic, minced
2 cups romaine or other firm lettuce
1/4 cup cheddar cheese, grated
1 tbsp. sour cream
1 tbsp. ranch dressing (optional)
1 avocado, diced
Heat skillet over medium high heat. When it is hot, add bacon and cook for 5 minutes, allowing the fat to render and the bacon to start to become crispy. Add the ground beef into the pan, breaking it up and letting it brown for another 5 minutes.
Add in your spices. I’m using a chipotle pepper powder and this awesome guac seasoning I found. If you are using a pre-made seasoning, be sure to look at the ingredients for hidden carbs. This mix is just dried cilantro, chives, lime and just a couple of other ingredients. No fillers.
Stir and cook for 3 minutes, letting those spices cook into the meat.
Remove the beef from the pan and add in the onions and peppers. Cook for 5 minutes or until veggies begin to soften, stirring often. Add in the garlic, stir and cook one minute.
Return the meat to the pan, including the resting juices. Now, taste your ingredients and see if you need a little salt or pepper or more seasoning. I like things on the spicy side so I ended up adding more chipotle seasoning.
Layer your bowl: salad greens on bottom, topped with meat and veggies, grated cheese, sour cream, avocado, maybe some hot sauce, really whatever you fancy. Just have fun with it!
Quick Beef Burrito Salad Bowl
Ingredients
- 1 lb ground beef grass fed
- 4 slices bacon chopped
- 1/2 red pepper diced
- 1/4 cup yellow onion diced
- 2 cloves garlic minced
- 1 tbsp chili pepper powder
- 1 tsp cumin
- 1 tbsp sour cream
- 1 tsp salsa/hot sauce
- 1 avocado diced
Instructions
- Heat a skillet on medium high heat. Add the bacon pieces and cook for 5 min. Add the ground beef and cook for 5 min, stirring and breaking up the meat until browned. Remove the meat from the pan. Add the spices and cook another few minutes. Add the onion and peppers and saute for 5 min until veggies soften. Add the garlic, stir and cook one minute. Add meat back into pan, stirring ingredients together. Taste and add salt, pepper to taste. Serve over firm salad greens with favorite toppings: sour cream, guac, cheese, hot sauce.
